This is a simple but very delicious dark chocolate cake.
It is moist and rich and has enough cocoa to guarantee a “pick-me-up” in the evening! A little goes a long way and even then there are a few guests who ask for more…
If you are lucky enough to have celebrated a special occasion on Damai then this will bring back some fond memories.
You will need:
Eggs x 5
Dark Chocolate x500g
Unsalted Butter x100g
Preheat your oven to 200°C.
Prepare a bain marie on the hob over low gas. Wayan uses a metal mixing bowl on top of a pan with water. Let the water in the pan boil so that the mixing bowl warms up and then add the chocolate and butter. Over a low heat let the chocolate and butter melt, stirring occassionally.
Once the ingredients have melted and you have a smooth mixture, remove from the heat.
In a separate mixing bowl, crack the eggs and add the sugar. Whisk together.
Pour the chocolate mix into the bowl of eggs and whisk together. Once it has combined well you can pour into a square dish suitable for the oven.
Prepare a bain marie for the oven. Wayan uses a square metal dish with water in which he places the smaller dish with the mixture in it.
Place both dishes in the preheated oven for 45 mins.
Serve with your favourite chocolate sauce and fresh, sliced strawberries.
Many thanks to all our Damai chefs who provide us with such delicious, healthy food onboard…
