On Damai all our salad dressings are made with fresh produce from scratch and we are lucky enough to have a good selection of both salads and dressings served daily.
My personal favourite is Wayan’s lemongrass dressing which has a clean, crisp taste and is really flavoursome. The list of ingredients is extensive but after that it’s really easy to make and you can serve it with a variety of salads. We like to serve it with our cayote salad and our pomelo salad.
You will need:
Shallot x 6
Spring Onions x1
Big Red Lombok Chilli x1
Garlic Cloves x3
Fish oil 2 tbsps
Black pepper ground
Palm sugar 1 tbsp
White sugar 1 tbsp
Olive oil 1 cup
Prepare the fresh ingredients and then chop finely. Grate the lemon rind and then add the juice of this lemon.
Add the black pepper, sugar, fish oil and the olive oil and stir well.
Serve with your favourite salad.
