Damai guests love the Indonesian cuisine that our excellent chefs prepare. One of their favourites for ‘second breakfast’ is Mie Goreng aka fried noodles. This can be served in a variety of ways depending on the guest’s taste: with bihun noodles; with egg noodles; ‘as it comes’; with a fried egg on top; with a mountain of bacon; flavoured with spicy sambal. The choice is yours and it all tastes amazing after your first dive.
This is a very versatile, easy dish to cook and all the ingredients are available to you in the western world so check this out and try it at home. Every bite will bring back memories of diving on Damai.
You will need:
Rice Noodles 50g*
Bok Choy chopped
Garlic x3 cloves chopped
Coriander Leaf chopped
Sweet Soy Sauce
Salt to taste.
*Rice noodles are already cooked by soaking them in hot or cold water for 10minutes. Can also use egg noodles if prefer.
Heat oil in pan. Add chopped garlic. Add egg and scramble. Add cabbage, then bok choy and then carrots and stir fry. Add noodles and salt to taste and sweet soy sauce. Garnish with chopped coriander leaf.
Serve with a nice cold beer.
