There are always plenty of Damai guests who enjoy some added spice on their dinner table and the Indonesian tradition of adding Sambal to their food (or it is food to their sambal… 😉 ) is eagerly anticipated by many.
‘Sambal’ literally means a ‘hot sauce made from chili peppers’ and most families in Indonesia have their own recipe.
If you are missing Damai and would like to make some Sambal at home to remember us by, then this recipe is a favourite of our very own Chef Wayan.
You will need:
Shallot x 5
Garlic cloves x 5
Small red Chilies x5
Large red chilies x8
Large Tomato x1
Salt 1 tsp
Black pepper 1 tsp
Lime leaf x2
(or you can try with lemongrass)
Prepare the ingredients and put a pan on to heat the oil. Once hot, add all ingredients and cook for 5 minutes.
Remove from the heat and add to an electric food blender. Blend the ingredients until smooth and then return them to a pan on the heat. Cook through for a few minutes and serve for a taste of Indonesia.
